Combining exceptional brightness and clarity of Ethiopian beans with bold, tropical and complex organic coffee from Sumatra, Freedom Run is vibrant, balanced, and full of character.
A new arrival from the highlands of Yirgacheffe, Ethiopia coffee is grown at altitudes of 1,800 to 2,000 metres by over 750 smallholder farmers, this washed heirloom coffee is processed at the Dumerso Washing Station.
The cherries are grown in mineral-rich red clay soil, shaded by native Acacia, Birbirra and Wanza trees. After hand-sorting, they are pulped and fermented for up to 48 hours before being dried slowly on raised beds for up to 15 days.
Sumatra coffee comes from Koperasi Redagang Kopi Ketiara in Sumatra, women-led cooperative with over 25 years of experience in coffee production. The coffee is grown in the forested mountains surrounding Leuser National Park, using shade-grown techniques.
Traditional Giling Basah processing method is preferred by the cooperative. Red cherries are harvested early in the day, hand sorted, and depulped within 24 hours. The de-pulped cherries are then fermented cement tanks and then sun dried on the farm. Next, the coffee is transported to the wet hulling facility to be hulled and dried to achieve specialty coffee standards.
Running brings excitement and anticipation, strong drive to push through challenges, euphoria of a "runner's high" and many other complex emotions.
We aimed to capture it by creating a special edition coffee blend for Freedom Run runners.
Deeply complex and full bodied cup where brown sugar, fresh earth, tobacco, cedar, and cacao of Sumatra are well complimented by zesty notes of lime and delicate florals of Ethiopia.
